Thai Inspired Scrambled Eggs

As I said before, I bought some ingredients to make some Thai spring rolls and decided to see what other dishes I could create using them. Somehow the ingredients sounded like they would taste really good in some scrambled eggs so I tried them that way and liked them so much, I made them again. The coconut milk really makes the eggs fluffy and delicious.

Thai Inspired Quinoa

Thai Inspired Quinoa

 

I bought some Thai ingredients to make some spring rolls and have so much stuff left over, thought I would try making some other dishes with them. I love quinoa and thought it would lend itself well to some Thai flavors. Well, I didn't realize just how well. I was happily surprised how delicious this is.

Subway's Gluten-Free Pilot Program

I knew Subway was launching a "new" pilot program to carry gluten-free sandwiches in Texas and wanted to know if any other areas were carrying them yet. Almond Stuffed Dates

I decided to give my mother's stuffed date recipe an overhaul in flavor and texture. Although I always loved her stuffed dates while growing up (we had them every Christmas). I thought they would taste really good with a nut inside of them. Which got me to thinking about what the cream cheese part would taste like if I flavored it.  The result is the following recipe. The hardest part was not eating them all!

Peanut Butter Strawberry Chocolate Toast

I was trying to figure out how to tell you to make this sandwich that I make all the time. It's one of my absolute favorites. I don't measure but you'll see why.
