Gluten-Free Does Not Mean Flavor Free

I decided to give my mother's stuffed date recipe an overhaul in flavor and texture. Although I always loved her stuffed dates while growing up (we had them every Christmas). I thought they would taste really good with a nut inside of them. Which got me to thinking about what the cream cheese part would taste like if I flavored it.  The result is the following recipe. The hardest part was not eating them all! 

 

Almond Stuffed Dates

 

Ingredients:


4 oz cream cheese

1/2 tsp pumpkin pie spice

8 oz dates, pitted

almonds (about a cup)

1/4 cup powdered sugar

 

Directions:

 

Mix the pumpkin pie spice with the cream cheese in a small bowl. Split a date almost in half with a knife (so that it folds open) and fill with about a half a teaspoon of the cream cheese mixture and one almond.  Close and roll in powdered sugar. Continue this process with each date. If not eating them right away, store in covered container in refrigerator.
