Gluten-Free Does Not Mean Flavor Free

Caramel Apple French Toast

I created this for something a little different to eat and because I had not had French toast in years! My boyfriend and I really loved it! This can be made dairy free - just look at the options to convert.

4 slices Udi's Whole Grain Sandwich Bread (for this recipe, it is best to set out the bread before you begin to give it a chance to dry out a little)

Batter (see below)

Sauce (see below)

butter (or coconut oil or your choice of fat) for pan

Cover inside bottom of large skillet with a light coat of melted butter (I usually just run the stick quickly over the inside bottom of heated pan to coat it). Dip a slice of bread in batter and then flip to make sure both sides are completely covered. Place in pan and continue until all bread is in the pan. Once bread is nice and browned, flip to brown other side.

Remove from pan and place on plates, cover with sauce and serve immediately.

Batter Ingredients:

1 cup milk (dairy, rice, soy or almond)

2 eggs

1 tsp real vanilla

1/2 tsp cinnamon (or pumpkin pie spice)

1 tbsp raw sugar

Batter Directions:

Whisk the ingredients in a bowl with a large bottom (large enough to easily fit a piece of bread) and set aside.

Sauce Ingredients:

1 tbsp butter or your choice of fat

1/4 cup brown sugar

1/2 tsp cinnamon (or pumpkin pie spice)

1 apple, cored, peeled and sliced

Sauce Directions:

Melt butter in warm pan and add the brown sugar and cinnamon. Cook on medium heat - do not let the sauce get too hot or it will turn hard. Once sauce starts to thicken, add apple slices and stir. Let the apple slices get warm then remove from heat or place on very low heat (keep an eye on it if you do this).
