Favorite Gluten-Free Turkey Meatloaf
I created this dish before I was gluten-free and have converted it to gluten-free. I do hope you enjoy it! My boyfriend was excited about trying this and ate all of his and wanted to take some for his lunch tomorrow!
2 lbs lean ground turkey (can use lean ground beef instead)
1 cup GF dry bread crumbs (I used Udi’s sandwich bread – I toasted two slices, then cut into small pieces and put in oven at 350* until cut edges were crispy)
1 tbsp brown sugar
½ cup catsup (ketchup) (I used Heinz - says gluten-free on label)
½ tsp sea salt
1/8 tsp pepper, freshly ground
1/8 tsp nutmeg, freshly grated
½ tsp cumin
¼ tsp cinnamon
1 tsp San-J Tamari sauce
½ cup onion, chopped
3 cloves garlic, minced
1 bell pepper, chopped (optional)
½ cup celery, chopped (optional)
¾ cup catsup
1 1/2 tsp mustard (I used French's - it's gluten-free)
3 tbsp brown sugar
¼ tsp nutmeg, freshly grated
Combine base ingredients in a large bowl. Divide into two 9X5 loaf pans* (or use mini-loaf pans) and set aside.
Combine glaze ingredients and spread over turkey meatloaves.
Bake turkey meatloaves, uncovered, at 350* for about an hour and 15 minutes.
*I am not into cleaning pans so I line the pans with parchment paper or aluminum foil before I put anything in them.
