Gluten-Free Does Not Mean Flavor Free

Peanut Butter Strawberry Chocolate Toast

I was trying to figure out how to tell you to make this sandwich that I make all the time. It's one of my absolute favorites. I don't measure but you'll see why. 

 

Ingredients:

 

2 slices of gluten-free bread for each sandwich

 

Peanut Butter (all natural is my favorite - crunchy or creamy)
Strawberry preserves
Chocolate Chips (I use bittersweet but use whatever gluten-free chips you like)

 

Directions:

 

Put two pieces of bread in toaster.  

 

While they are toasting, get a small plate and spread peanut butter in the center of the plate - it should be about the size of a slice of bread. Spoon some strawberry preserves on top of that and spread it out to cover the peanut butter.  Sprinkle the top with some chocolate chips. Microwave for one minute. 

 

Get another small plate and put one piece of toast on it. Pour the melted mixture on top of it and place the other piece of toast on top. (Or you can put both slices on the plate and pour mixture over top for an open-faced sandwich - I have done if both ways.) 

 

It's a very messy, decadent, scrumptious sandwich that is healthy too. I dare you to eat one and not get any on you!

 

Depending on your choices for bread and chocolate chips, this can be vegan and casein free too.
