Gluten-Free Does Not Mean Flavor Free
Thai Inspired Quinoa
I bought some Thai ingredients to make some spring rolls and have so much stuff left over, thought I would try making some other dishes with them. I love quinoa and thought it would lend itself well to some Thai flavors. Well, I didn't realize just how well. I was happily surprised how delicious this is.
Ingredients:
3 or 4 leaves fresh mint
about a tablespoon fresh Thai basil, chopped
1/4 cup onions, minced or chopped
4 cloves garlic, minced
1 cup quinoa, *rinsed
2 cups water or stock
Salt to taste
1/3 cup coconut milk
Directions:
Place all ingredients (except the coconut milk) in a rice cooker and turn it on. When quinoa is done, finish it off with the coconut milk. It is really delicious. All the flavors just pop. I will definitely make this again.
*Even if the package says your quinoa is rinsed, you should still rinse it in a fine mesh sieve - it will taste better.
