Gluten-Free Does Not Mean Flavor Free
Someone asked for a gluten-free and dairy free recipe for frosting in a group I am in and I gave them this recipe. I hope it helps those of you that need both gluten-free and dairy free frosting. Just make sure that all your ingredients are gluten-free.
Vanilla Frosting – Gluten-Free and Dairy Free
1 cup Smart Balance (non-dairy butter substitute)
1 Tablespoon Pure Vanilla Extract
16 oz of Powdered Sugar
2 Tablespoons Coconut Milk (or your choice of non-dairy milk)
Beat butter substitute and vanilla in large bowl with electric mixer on medium speed until light and fluffy. Gradually add confectioners' sugar, beating until well blended after each addition and scraping sides and bottom of bowl frequently.
Add coconut milk; beat until light and fluffy. If frosting is too thick to spread, gradually beat in additional coconut milk.
